Roasted Rosemary Beets Recipe

5 large beets, peeled & quartered
1-2 Tbsp fresh rosemary, minced
1-2 cloves garlic, sliced thin
1-2 Tbsp olive oil
salt & pepper, to taste

Toss and roast in shallow baking dish at 400 degrees F for 30 min. covered and 30 min. uncovered (or until fork tender).
